It answers one question: has fermentation finished? The airlock already told us it started. One reading does not finish a batch — two matching readings 48 hours apart do.
Hydrometer, trial jar, turkey baster, StellarSan at 1.5 mL per litre for one minute. Sanitise anything that touches the beer. The sample is about 150 mL and does not go back in the fermenter.
Gravity, the temperature off the Inkbird, the time you took it, and anything odd. Don't correct for temperature yourself — log both and Simon will.
Around 1.008–1.012, probably the low end. OG was 1.050. Above 1.020, tell Simon before doing anything — don't stir it, don't warm it, don't add anything.
Airlock fill — halfway up each chamber, not brimming. Overfull and a cooling cycle can suck sanitiser into the beer.
The 300 mm dial thermometer — it failed on brew day: right in ice, only 80 °C in boiling water. Re-test it in a deep pot, at least 150 mm of water. A dial senses along the whole stem, not just the tip, so a shallow pot leaves half the sensing element in air and it reads low for that reason alone. Same stem depth for both tests, mark it: ice slurry should read 0 °C, boiling about 99.6 °C here. Send Simon both numbers and how deep the stem was.
Hydrometer HYD1 was verified in plain water on 29 August and read exactly 1.000 — no offset. It can be trusted.
